These charming heart-shaped pastries are not only easy to whip up, but they satisfy my cravings for one of my go-to ultra-processed snacks as a teenager – Pop Tarts. A homemade option offers a less artificial version that in my opinion, tastes even better. Flaky pastry encloses a luscious filling of organic strawberry jam, all topped with a sweet icing. Ideal for Valentine’s Day or just any day you want to relax with a sweet pastry and a cup of coffee or tea.

It’s up to you whether you want to fill the pastries with jam, hazelnut spread, or cream cheese, or if you’d like to use a different cookie cutter shape to suit your needs. Whatever you decide, your personal touch will surely warm hearts!

Heartfelt Sweet Pastries

Yield: 22 pastries (with 3-inch heart cookie cutter)

Ingredients

2 refrigerated premade pie crusts (at room temperature)
Strawberry jam
1 egg

Icing:
1/2 cup confectioners sugar
2 Tbsp milk
1/2 tsp vanilla extract (I used almond extract and it was delicious too)
1 drop of red food coloring (can use beet juice for a healthier option)
Sprinkles

Instructions

Preheat oven to 400°F.

Unroll the premade pie crust and use a heart shaped cookie cutter to cut hearts and place them onto a cookie sheet. You will want to rotate your cookie cutter to get as many cuts as possible out of your pie crust. Knead remaining pie crust and roll it out to about 1/8 inch thick and cut the remaining hearts.

On half the hearts, place 1/2 -1 tablespoon of jam in the center of the heart. It does not need to be perfectly spread. It will even out when baking.

In a small bowl, beat an egg for your egg wash. Brush the inside edges of your heart. Place a heart cutout on top. Now seal the edges together with your finger. Then use a fork and press down to crimp the edges around the whole heart.

Use the fork to poke some holes into the top of the pastry to release steam. Brush the tops with egg wash.

Bake at 400°F for 10-12 minutes.

Let sit a minute or two and then remove to cool on a wire rack.

While cooling make the icing. Whisk the confectioner’s sugar, milk and vanilla. Once the consistency is smooth, add one drop of red food coloring to make pink. You can add more drops if you’d like to make red.

Dunk the fronts of the pastries into the icing. You may let it dry and then do another layer. Top with sprinkles before the icing dries.

Ingredients

Cake:

Box white cake mix
1 cup granulated sugar
1 ⅓ cups water
3 eggs, room temperature
1 tbsp vanilla extract
2 tbsp vegetable oil
1 cup all-purpose flour
½ tsp kosher salt
1 cup full fat sour cream

Filling:

7 oz marshmallow creme (you can also use marshmallow fluff)
¾ cup salted butter, room temperature
2 cups powdered sugar
1 ½ tsp vanilla extract
¼ tsp kosher salt
2-4 tbsp heavy cream, room temperature

Coating:

32 oz almond bark
3 tbsp Crisco (you can also use vegetable oil or butter)
pink gel food dye (it must be gel based or the almond bark can seize)

To make the Cake:

  • Preheat the oven to 350° and spray and line 2 sheet pans with parchment paper.
  • Mix together the boxed cake mix, sugar, water, eggs, vanilla and oil until combined, about 1 minute. Add in the flour, salt and sour cream and mix on medium until incorporated and there aren’t any lumps, 2-3 minutes.
  • Divide the batter evenly between both pans and smooth. These cakes will be thin! Bake for 15-18 minutes or until completely cooked through.
  • Remove from the oven and allow to cool at room temperature for 30 minutes before refrigerating for 30-60 minutes.

Filling:

  • Beat the marshmallow creme and butter on medium high speed until smooth, about 1 minute. Add in the powdered sugar, vanilla, salt, and 2 tbsp of heavy cream or milk. Mix on medium speed until smooth and add additional heavy cream until it reaches desired consistency. You want it spreadable but not too thin.

Assembly:

  • Once the cake has cooled, cut out 32 hearts using around a 3 inch cookie cutter. Spread the filling on top of half of the hearts and top with another heart. Place on a sheet pan lined with wax paper or parchment paper and freeze for 1 hour.

Coating:

  • In a large heatproof bowl, melt the almond bark, 30 seconds at a time mixing in between, until totally melted. Stir in the Crisco until smooth. Remove ½-1 cup of the white almond bark and add to a separate heatproof bowl for the decorations. Mix about ½ tsp of pink gel color food dye into the larger bowl of almond bark and allow to cool for 3-5 minutes before dipping in the heart cakes.

To decorate:

  • Dip the frozen cakes completely into the pink melted almond bark and place onto a cookie rack covered in wax paper or parchment paper. Allow to set for 10 minutes before drizzling on the leftover white chocolate in random circles to create design.

Instructions

Rhubarb Honey Jam:

  • Drain the can of rhubarb and save juice for later.
  • In a blender, add the rhubarb, 1/4 cup granulated sugar, 1/4 teaspoon salt, honey, and vanilla extract and blend until smooth.

Cupcakes:

  • Preheat oven to 350°.
  • Meanwhile, in a large bowl, beat the butter and sugar until smooth.
  • Add the egg, vanilla extract, milk and sour cream and blend until smooth.
  • Add the dry ingredients to the bowl and beat slowly until well combined and only a few lumps remain.
  • In lined cupcake pans, fill each cup ¾ full.
  • Bake at 350° for 25 minutes, or until a toothpick inserted in the center of the cupcake comes out clean. Set aside and allow to cool completely.

Buttercream:

  • Beat reserved rhubarb sauce and 1 stick of butter until smooth.
  • Mix in the vanilla extract and slowly add in the powdered sugar, 1 cup at a time. Beat on high until the buttercream is light and airy.
  • Add the buttercream to a piping bag with a piping tip.

Cupcake Assembly

  • After your cupcakes are cooled to room temperature, it’s time to fill them. Scoop about 1 Tablespoon out of the center of each cupcake. Fill with two teaspoons of rhubarb jam and cover the with the piece of cupcake that you removed.
